It’s Saturday again and time for meal planning. As the weather gets warmer, I am finding it harder and harder to get dinner on the table. We are busy with end of school year activities and enjoying the beautiful weather. I bought a lot of ground beef lately when it was on sale, browned it, and stuck in the freezer for those busy days. I left some plain to use in casseroles. Here’s what I did with the rest of the browned ground beef: Added taco seasoning for tacos or taco salad. Made meat sauce for spaghetti and lasagna. Made sloppy joes. I also made barbecue meatballs from the ground beef and hamburger patties. We are also pulling out the smoker (a father’s day gift last year for my husband that has benefited all of us) this weekend. We like to smoke meat on the weekend for dinner and then have it again one to two nights during the week.
