It was a busy week getting everything ready to travel, but I was still able to squeeze in one new recipe this week. I tried an easy and quick weeknight meal this week: Baked Teriyaki Chicken Meatballs. They use ground chicken, which I got for super cheap a few weeks ago. The recipe calls for a 1 1/2 of ground chicken. We only had a pound, so we alternated the measurements slightly. They were a huge hit and we needed more for our of five. Next time we will double the recipe.
