I can’t believe it’s May already! May is always a busy month for us with end of school, graduation, mother’s day, Memorial Day, a rodeo at the end of the month that our small town hosts, and soaking up the beautiful spring weather. On top of all that we are traveling this month. It’s more important than ever that I plan and prepare ahead. We use our grill and smoker a lot more this time of year and I rely on the slow cooker and stuff I have frozen much more.
I get my recipes from a variety of sources: my collection, magazines, cookbooks, friends, blogs, and Pinterest. My goal is try at least one new recipe a week. If the recipes are found on blogs or Pinterest I will include a link below. Otherwise please feel free to leave a comment or contact me for a recipe.
Baked Manicotti~this can be made a head and frozen. The recipe makes a lot, so I usually divide it and have two meals ready in the freezer.
Baked Orange Chicken Meatballs~this was a new recipe I tried last week. I love to make meatballs. They are easy to put together and there are so many variations you can do. These were made with ground chicken that I picked up few weeks ago for really cheap and had in the freezer.
Asian Salmon in Foil~Our kids all love salmon. I love the cooking in foil.
